The cellars of the Maison, steeped in centuries of history, allow for the consistent aging of Champagne at a controlled temperature.
The various cuvées are the result of meticulous blending of grape varieties and crus from the estate. This imparts a distinctive consistency to Cuvée Carat.
After the establishment of alcoholic and malolactic fermentation, Cuvée Carat Brut undergoes aging with Black Pinots and a touch of finesse with Chardonnays.
The trilogy of Cuvée Carat is then bottled, and it rests in the cellar: Brut, Blanc de Blancs, and Rosé.
Carat is the culmination of extensive labor, combining patience and precision to extract the quintessence of the vineyards from the selected villages.

“We have chosen Edouard Brun, a domain founded in 1898 in Aÿ, owner of a family vineyard in the Mountain of Reims (in France), for the quality of its ancestral craftsmanship, the wine is aging in traditional oak barrel, and its rare Premier Cru classification. Our founder selected the villages and parcels dedicated to Cuvée Carat. The classified vineyards are located in the villages of Chigny-les-Roses, Ludes, and Rilly. It required patience, meticulousness, and a perpetual quest for excellence to create the quintessence of our Champagnes.
